Ancre Hill Estates produces organic and biodynamic wines in Monmouthshire that reflect the local terroir as purely as possible. The family estate follows Demeter principles, promotes biodiversity and favours spontaneous fermentation and minimal technical intervention in the winery.

The estate manages approximately nine hectares planted with varieties including Chardonnay, Pinot Noir and Albariño. The winery is built from straw bales, has a green roof and treats wastewater through ecological ponds. Its combination of architecture, water management and spontaneous fermentation makes Ancre Hill one of Wales’s most distinctive biodynamic estates.

Blanc de Blancs from 2018 from Ancre Hill Estates is a dry sparkling wine. In aroma and taste, the emphasis is on lemon, green apple, ripe pear and a soft mineral impression. The fine effervescence, fresh acidity and well-kept structure provide an energetic, balanced aftertaste. The wine is made from Chardonnay; the alcohol content is 12%. Serve well chilled as an aperitif or with seafood, light starters, soft cheeses and festive appetizers.
