Domaine Hugo

Domaine Hugo produces certified organic and biodynamic sparkling wine in Wiltshire. The producer aims to let healthy grapes and chalk-rich soils speak through spontaneous fermentation, few additions and as little filtration or fining as possible.

The vineyard and wines are certified organic and biodynamic. The field blend includes Chardonnay, Pinot Noir, Pinot Meunier and Pinot Gris, among other varieties, and is made without added sulphites, fining agents or dosage. The approach combines field blends, spontaneous fermentation and highly restrained cellar techniques to preserve a dry, unpolished style with a clear sense of place.
