Wijngaard Dassemus manages its vineyard in harmony with nature. The organic and Demeter-certified estate uses no artificial fertilisers, fungicides, pesticides, copper or sulphur. Herbs, green manures, hedgerows and ponds strengthen the soil, biodiversity and water management. In the cellar, natural wines are made through spontaneous fermentation, minimal additions and often extended skin contact. Dassemus thus aims to create characterful wine with as little intervention as possible.

The vineyard near Chaam covers 6 hectares and has more than 22,000 vines of thirteen grape varieties. The first hectare was planted in 2005, and the business has been Demeter-certified since August 2021. In addition to still and sparkling wine, Dassemus produces orange wine, apple cider and eau-de-vie. Some of the wine matures in amphorae.
